[目的]了解济宁市农村食品安全现状,找出影响食品安全的原因,保证农村食品安全。[方法]2006年3月至2007年4月,我们对济宁市10个乡镇的农村食品安全情况进行调查。[结果]调查食品生产加工企业109户,证照不全的占57.80%,无检验室的占67.89%,食品出厂不检验的占35.78%、委托检验的占28.44%;调查食品经营企业847家,证照不全的占21.25%,有“三无”产品的占4.72%,有过期、变质、霉烂食品的占2.95%;调查饭店193个,生熟食品存放加工未分开的占29.02%,餐具未按规定消毒的占52.85%;调查食堂32个,生熟食品存放加工未分开的占37.50%,餐具未按规定消毒的占37.50%;调查养殖场328个,兽药残留均无法测定;调查屠宰厂48个,定点屠宰的占77.08%;调查农贸集市28处,查处“三无”产品79个,过期、变质、霉烂产品60个。[结论]济宁市农村食品安全存在较多问题。
[Objective] To understand the status quo of rural food safety in Jining, find out the reasons that affect food safety and ensure the safety of rural food. [Method] From March 2006 to April 2007, we investigated the rural food safety in 10 townships in Jining. [Results] Investigation of 109 food production and processing enterprises, accounting for 57.80% of the incomplete certificates, 67.89% of the non-inspection laboratories, 35.78% of the products leaving the factory for non-inspection and 28.44% of the entrusted inspection; investigating 847 food business enterprises, Accounting for 21.25% of the total, accounting for 4.72% of the products without “” and “2.95%” with outdated, deteriorating and rotten foods; 193 restaurants were investigated, 29.02% of the raw and cooked food products were stored and processed, 29.02% 52.85% were disinfected according to the regulations; 32 canteens were surveyed, 37.50% of raw and cooked food were stored and processed separately, 37.50% were not disinfected tableware; 328 farms were investigated, veterinary drug residue could not be measured; 48, designated slaughter accounted for 77.08%; survey farmers market 28, investigate and deal with “79 ” product 79, expired, metamorphism, mildew product 60. [Conclusion] There are many problems in Jining rural food safety.
