按一定比例调节储藏环境中的气体成分,并配合适宜的温、湿度条件,以延长水果的储藏期和货架寿命、减少冷害和一些生理病害、保持原有品质的方法称为“气调储藏”(CA 储藏)。采用这种方法使果品保鲜已有较长的历史,到目前仍是国内外公认的较理想的储存手段。近年来,我国对这项技术的研究和应用愈来愈重视,并收到了良好的效果。现就水果气调储藏的历史、现状和应用前景作一概述。
