研究了山葡萄浆果中游离氨基酸种类及含量,结果表明随果实成熟度提高,氨基酸含量明显提高。山葡萄不同种质间游离氨基酸含量差异极大,多数种质游离氨基酸含量在1700—3500mg/L之间,含量最低种质‘77023’仅为769mg/L,而小南‘747’最高达6819mg/L。在研究的32份种质材料中,30份种质的主含游离氨基酸为苏氨酸(THR),占总氨基酸含量的33.21%,其它大量氨基酸为丙氨基酸(ALA),精氨酸(ARG),脯氨酸(PRO),谷氨酸(GLu)和丝氨酸(SER),分别占总氨基酸含量的18.65%、14.88%、8.97%、7.00%和6.48%,六种氨基酸占总氨基酸的88.79%,仅有通化一号、通化十二号主含氨基酸为丙氨酸。
The types and contents of free amino acids in the berry of mountain grape were studied. The results showed that the content of amino acids increased obviously with the maturity of the fruit. The contents of free amino acids in different grapevines vary greatly. Most of the germplasm free amino acids are between 1700-3500mg / L, the lowest germplasm ’77023’ is only 769mg / L, while the other is ’747’ up to 6819mg / L . Among the 32 germplasm materials studied, 30 germplasms contained THR, which accounted for 33.21% of the total amino acid content, and the other amino acids were alanine (ALA), arginine (ARG), proline (PRO), glutamic acid (GLu) and serine (SER) accounted for 18.65%, 14.88%, 8.97%, 7.00% and 6 .48%, six kinds of amino acids accounted for 88.79% of the total amino acids, only Tonghua One, Tonghua twelve main amino acids to alanine.
