为解决寒区部队饮食单调,个别营养素缺乏,做到科学调配膳食,我们于1987年春季,对驻寒区某部膳食营养调配效果进行了实验观察,结果如下。 (一) 观察方法 选择同一营的两个连队,分为调配组和对照组,均按步兵一类灶的伙食标准,加上“斤半加四两”的补助。营养素则按1984年修订的陆军营养素供给标准供应。膳食调查采取记录和计算3、4月份的定额食谱。 (二) 调配方法 调配组按劳动强度确定主食摄入量,副食品根据季节变化调配蔬菜结构比例,每日保证2~3种绿叶蔬菜,每周2~3种红色蔬菜,1次鱼和动物肝脏。以牛肉代臂肥猪肉,在米、面食物里加豆类和干果。
