目的了解绍兴市辖区内市售非发酵性豆制品卫生状况,为制定针对性措施提供参考依据。方法采集17家集贸市场、超市出售的非发酵性豆制品59份,检测菌落总数、大肠菌群、致病菌以及苯甲酸、山梨酸、吊白块。结果 59份抽检样品总合格率为42.4%,不合格主要原因为菌落总数、大肠菌群超标以及违规使用添加剂苯甲酸。结论市售豆制品总体卫生质量不佳,微生物污染以及违规使用添加剂是豆制品存在的主要问题,应加强监管。
Objective To understand the health status of commercially available non-fermented soybean products in Shaoxing area and to provide reference for the formulation of targeted measures. Methods A total of 59 non-fermented soybean products were collected from 17 bazaars and supermarkets, and the total number of colony, coliforms, pathogens, benzoic acid, sorbic acid and sorbic acid were detected. Results The total passing rate of 59 sampling samples was 42.4%. The main reasons of unqualified were the total number of colonies, excessive coliform bacteria and the use of benzoic acid as additive. Conclusion The overall hygienic quality of commercially available soy products, microbial contamination and illegal use of additives is the main problem of soy products should be strengthened supervision.
