麻菇是湖南省草菇地方品种,原产地浏阳,因最先栽培是以麻杆为基质,故此而得名。麻菇栽培历史悠久,清代同治12年(1873年)湖南浏阳县志卷三十七第十八页记载“县西南刈麻后间生麻菌……”距今已有100多年。麻菇以干制加工为主,其产品是我省著名的土特产品,畅销东南亚。 (一)麻菇的营养成份麻菇香味极浓,味美,是草菇中的上品。营养价值极高,干品含粗蛋白43.38%,纯蛋白29.07%,几乎高于所有任何其它食用菌的含量,维生素C含量也是食用菌中最高的(表一)。麻菇的氨基酸含量丰富,富含人体必需氨基酸,其量占氨基酸总量的39.55%(表二)。麻菇也是一种无公害蔬菜,各种有毒物质的含量均低于标准(表三),符合湖
