辐照是一种很普通的消毒方式,它是利用游离辐射来破坏附着在食物上的所有生物,不必拆包装就可以将它们杀死,包括细菌、微生物和细小的昆虫等。辐照不等于辐射,辐照后在食物上并不留下有碍健康的放射性物质,但改变了食物的本质,同时食品的营养素都会有所流失。而且蛋白质、不饱和脂肪酸、益生菌和酵素也会被破坏,并导致人体内产生大量自由基,继而破坏体内的抗氧化物质,如长期食用辐照食物对健康有害。
