本文所称的蘑菇又名西洋菌或簡称洋蘑(学名是Psalliota campestris Fr),在植物学上屬于眞菌門、担子菌綱、伞菌目、伞菌科、环状伞菌屬。有純白、淡黄、褐色等品种,我国現在栽培的大都是純白的一种。新鮮的蘑菇“色、香、味”三美,营养价值很高。据苏联資料,新鮮的蘑菇中含有蛋白质6.4%、脂肪0.54%、醣类3%,并含有磷、鉀、鈣、鉄等矿物質以及維生素甲、乙、丙、丁等,是一种人人喜食的特种蔬菜。因此,大量发展蘑菇生产,对消灭蔬菜生产淡季,满足人民生活需要,有重要作用。我国目前的蘑菇生产,几乎90%以上都在室內进行。室內栽培的优点是可以避免风、霜、雨、雪等自然災害的侵袭,溫湿度容易控制調节,生产較有保
