目的了解惠阳区规模较大超市凉拌菜污染情况,为制订管理措施提供依据。方法对惠阳区5间较大超市凉拌菜抽检肠道致病菌(包括沙门菌、志贺菌和金黄色葡萄球菌),每月1次分析检测结果并提出解决方案。结果 2009年1~12月共抽检了203份凉拌菜,共有43份检出肠道致病菌,总污染率达21.2%,其中连锁店抽检凉拌菜污染率13.3%(15/113);而非连锁经营店抽检凉拌菜污染率31.1%(28/90)。结论 2009年惠阳区超市里凉拌菜卫生质量较差,污染较严重,合格率偏低。卫生监督部门应加大卫生监督力度,消费者应增强卫生质量意识,做好自我防护,防止细菌性食物中毒发生。
Objective To understand the pollution of salad vegetables in Huiyang large-scale supermarkets and provide the basis for formulating management measures. Methods The pathogenic bacteria (including Salmonella, Shigella and Staphylococcus aureus) in five large supermarkets in Huiyang District were sampled and analyzed once a month and the solutions were put forward. Results From January to December 2009, a total of 203 salad dishes were sampled. A total of 43 pathogenic bacteria were detected, with a total contamination rate of 21.2%. Among them, the contamination rate of salad dressing in the chain stores was 13.3% (15/113) Chain store inspection Salad contamination rate of 31.1% (28/90). Conclusion In 2009, the hygienic quality of the cold salad in the supermarket of Huiyang was worse, the pollution was more serious and the pass rate was lower. Health supervision departments should increase health supervision, consumers should enhance awareness of health quality, self-protection and prevent bacterial food poisoning.
