种子蛋白质对于人及家畜来说是重要的蛋白质来源。其营养价值以动物蛋白质的氨基酸做为100%,种子蛋白质则为40~75%。然而,在麦类中的赖氨酸,豆类中含硫氨基酸则成为第一的必需氨基酸。又,蛋白质含量的平均干物重豆类为20~40%,而谷物类较低,一般为7~14%,因此,提高做为营养源并占有重要位置的植物种子蛋白质的品质,应首先做好氨基酸的平衡,其次有必要增加蛋白质的含量。另一方面,伴随气候异常,土壤贫弱等作物栽培环境的恶化,人口激增,食粮不足等全球问题,今后含有优质蛋白质的种子作物的生产是一个非常重要的研究课题。
