通过对黄淮麦区2013年收获的326份高产强筋小麦样品进行全面分析和评价,结果表明,小麦样品的千粒重平均值为(41.28±5.40)g,容重平均值为(788.68±24.92)g/L,籽粒硬度指数平均值为(64.11±5.03)%,粗蛋白质含量平均值为(15.79±1.55)%,湿面筋平均值含量为(35.22±4.92)%,面筋指数平均值为(83.38±18.61)%,降落数值平均值为(294.77±72.07)s,沉淀指数平均值为(45.48±12.56)m L,吸水率平均值为(59.64±3.81)%,形成时间平均值为(6.86±7.60)min,稳定时间平均值为(13.27±10.76)min,弱化度平均值为(63.95±42.40)BU,最大拉伸阻力平均值为(554.36±234.35)E.U.,延伸度平均值为(162.81±59.00)mm。
