中职烹饪基本功实训教学是中职的一门基础课程,也是中职烹饪实践中重要的组成部分,可以为社会培养高技术烹饪人才。当前很多中职院校对烹饪的基本功实训教学目的没有清楚的认识,理解上存在偏差,导致授课的形式过于教条化、机械化。结合教学经验,浅谈中职烹饪基本功实训教学方法。
The basic teaching of secondary vocational training is a basic course in secondary vocational education, but also an important part of the practice of cooking, can cultivate high-tech culinary talent for the community. At present, many secondary vocational schools do not have a clear understanding of the purpose of cooking basic skills training, there are deviations in understanding, leading to teaching too dogmatic and mechanized. Combining with teaching experience, teaching methods of basic skills training in secondary vocational schools are briefly discussed.
