腐败希瓦氏菌对氧化三甲胺的代谢特性研究

从鳕鱼表皮和内脏的混合菌群中分离纯化出能够稳定代谢氧化三甲胺(TMAO)的细菌Y0612,对其进行16S rDNA分析鉴定及Biolog微孔鉴定,最终确定该菌为腐败希瓦氏菌(Shewanella putrefaciens).使用非抑制性离子色谱对腐败希瓦氏菌Y0612代谢TMAO的能力进行了分析,研究了菌株对TMAO的代谢规律.确定TMAO还原所发生的阶段是在Y0612的生长对数期;Y0612对TMAO的还原不受氧气的抑制,在有氧条件下对TMAO的还原效果比厌氧条件下更好;TMAO的代谢率随着温度(15~35℃)的升高而略有升高,Y0612的最适生长和代谢TMAO的盐度为15~ 25 g/L.该研究可为水产品中TMAO的代谢规律及内源性甲醛的产生机制的阐明提供一定依据.
