目的了解快餐连锁店冷冻饮品卫生质量现状,为提高冷冻饮品卫生质量提供参考。方法对2009-2011年泉州市部分快餐连锁店冷冻饮品随机抽样,进行微生物检测。结果冷冻饮品微生物指标总合格率81.8%,3年分别为94.1%,65.6%和84.8%;冰淇淋合格率76.1%,食用冰块合格率86.8%;检出项目中大肠菌群、菌落总数、金黄色葡萄球菌不合格率分别为13.1%、9.1%和1.0%。结论泉州市部分快餐连锁店冷冻饮品存在微生物污染问题,应加强卫生监督管理。
Objective To understand the status quo of the health quality of frozen drinks in fast food chains and provide references for improving the hygienic quality of frozen drinks. Methods Frozen drinks of some fast food chain stores in Quanzhou from 2009 to 2011 were randomly selected for microbiological tests. Results The total qualified rate of frozen drinks microbial indicators was 81.8%, 94.1%, 65.6% and 84.8% respectively in three years; the passing rate of ice cream was 76.1% and the passing rate of consuming ice was 86.8%; the total number of coliform bacteria, Staphylococcus aureus failed rates were 13.1%, 9.1% and 1.0%. Conclusion Some of the fast food chain stores in Quanzhou have microbial contamination problems. Health supervision and management should be strengthened.
