宝鸡市生牛乳及加工液态乳中铅含量测定及摄入风险评估

目的了解宝鸡市生乳及加工液态乳中铅污染状况,为食品安全评估提供依据。方法选取宝鸡市奶牛养殖户、奶站及超市中30份生乳及40份加工液态乳为监测对象,检测其铅含量,分析样本中铅污染情况及其摄入风险。结果 70份样本铅含量均值为(24.89±8.97)μg/kg,含量范围为2.1~86.0μg/kg;铅超标样2份,超标率2.8%。生乳中铅浓度与加工液态乳制品有显著性差异(sig=0.006),成人HQ(hazard quotient)均值为0.02<1,处于安全水平内;儿童HQ均值为0.15<1,儿童摄入危险指数高于成人,但均在安全水平内。结论宝鸡市生乳及加工液态乳铅超标率低,摄入风险低,个别牛乳中铅含量稍高,应加强管理和监督,降低居民因乳制品而引起的铅摄入风险。 Objective To understand the status of lead pollution in raw milk and processed liquid milk in Baoji City and provide the basis for food safety assessment. Methods Thirty raw milk and 40 processed milk were sampled from dairy farmers, milk stations and supermarkets in Baoji City. The lead content of the sample was measured, and the lead pollution and its intake risk were analyzed. Results The average lead content in 70 samples was (24.89 ± 8.97) μg / kg and the content range was 2.1 ~ 86.0 μg / kg. The lead concentration in raw milk was significantly different from that of processed dairy products (sig = 0.006). The hazard quotient in adults was 0.02 <1, which was within the safe level. The average HQ in children was 0.15 <1. For adults, but at a safe level. Conclusion Baoji City, milk and processing liquid milk lead exceeding the low rate of compliance, low intake risk, individual slightly higher levels of lead in milk should be strengthened management and supervision to reduce residents due to lead intake of dairy products risk.
