目的调查食品在加工过程中使用硫酸铝钾(铵),造成部分食品铝污染的现状,为确定污染水平提供基础数据。方法样品经干燥、灰化、定容后,用铬天青S分光光度法检测,铝的残留量以干样品中铝计。结果共检测194份样品,铝含量在<5.00~10522mg/kg之间,其中45.4%样品超标。结论油条油饼、粉条粉皮、海蛰存在铝污染问题。
Objective To investigate the current status of the use of potassium aluminum sulphate (Ammonium) in food processing, resulting in the contamination of some foods with aluminum, and provide the basic data for determining the level of pollution. Methods The samples were dried, ashed and fixed volume. The samples were determined by spectrophotometry with chrome azurol S, and the residual aluminum content was calculated as aluminum in the dry sample. Results A total of 194 samples were detected with an aluminum content of <5.00 ~ 10522mg / kg, of which 45.4% samples exceeded the standard. Conclusion There are aluminum pollution problems in oil cake, vermicelli noodles and jellyfish.
