[目的]了解南宁市零售水产品中副溶血性弧菌(VP)污染状况及危险性,为消费安全指导及预警预报系统建立提供科学依据。[方法]2006年开始,建立南宁市“市场零售-餐饮-医院”主动监测网,开展零售水产品中VP及其引起的食源性疾病标本监测检验,对检测结果及VP肠道疾病进行综合分析,提出食品安全风险预警。[结果]2006~2007年合计检测水产品328份,VP阳性的119份,阳性率为36.28%。VP阳性率,海产品为55.77%,淡水产品为6.20%(P<0.01);2006年为36.23%,2007年为36.32%(P>0.05)。2006年、2007年零售水产品中VP阳性率分别为36.23%和36.32%(P>0.05)。海产品中贝类VP阳性率高于鱼类、虾类、螺类和蟹类(P<0.01),鱼类、虾类、螺类和蟹类VP阳性率差异无统计学意义(P>0.05);贝类中牡蛎阳性率最高,达83.02%,平均菌浓度为3 607.5 MPN/g。夏冬季节水产品VP平均菌浓度高于春秋季节。食源性腹泻病人标本VP阳性率2006年为2.04%,2007年检测290份均为阴性。[结论]水产品中VP污染较高,特别是海产品中VP污染始终保持在较高风险,其中牡蛎尤其突出。VP是南宁市重要的食源性疾病病原菌。
[Objective] The study aimed to understand the status and risk of Vibrio parahaemolyticus (VP) in retail aquatic products in Nanning and provide a scientific basis for consumer safety guidance and early warning system. [Methods] From the beginning of 2006, the “Nanning Retail Market - Catering - Hospital” active surveillance network was established to monitor and test VP and its foodborne diseases in retail aquatic products. The detection results and VP intestinal diseases Conduct a comprehensive analysis, put forward food safety risk warning. [Results] A total of 328 aquatic products and 119 positive samples were detected from 2006 to 2007, the positive rate was 36.28%. VP positive rate was 55.77% for seafood and 6.20% for freshwater products (P <0.01); 36.23% in 2006 and 36.32% in 2007 (P> 0.05). The positive rates of VP in retail aquatic products in 2006 and 2007 were 36.23% and 36.32% respectively (P> 0.05). The positive rate of shellfish VP in seafood was higher than that in fish, shrimp, snail and crab (P <0.01), while the positive rate of VP in fish, shrimp, snail and crab had no significant difference (P> 0.05 ). The highest positive rate of oyster in shellfish was 83.02% and the average concentration of oyster was 3 607.5 MPN / g. The mean concentration of VP in summer and winter aquatic products was higher than that in spring and autumn. The positive rate of VP in patients with food-borne diarrhea was 2.04% in 2006 and 290 in 2007. [Conclusion] The VP pollution in aquatic products was high, especially the VP pollution in marine products was always at high risk, especially oyster. VP is an important foodborne disease pathogen in Nanning.
