亚硫酸氢盐可与氨基脲、甲氧胺以及羟胺等亲核含氮化合物协同作用,使胞嘧啶发生变化和引起噬菌体λ发生突变与失活。在亚硫酸氢盐存在下, 胞苷可与上述几种胺类的任何一种发生快速的转氨作用,其唯一产物是N(4)-转氨基5,6二氢胞苷-6磺酸。亚硫酸氢盐或亲核含氮化合物单独引起的胞苷变化比两者联合作用较为缓慢。胞苷经亚硫酸氢盐/氨基脲作用后,其产物为5,6-二氢-4-脲氨基-2酮嘧啶-呋喃核糖苷-6磺酸,此种产物经用磷酸盐缓冲液处理可转变成为4-脲氨基-2-酮嘧啶-呋喃核
