荠菜,又名荠荠菜、棕子菜、护生草,属十字花科的一、二年生草本植物。其根白色,叶浅绿,塌地丛生,叶片羽状,深裂或全裂,总状花序,花小呈白色,种子金黄色,细小。荠菜原生我国,早在《诗经》等古籍中就有记载。说明荠菜被我国人民所认识和利用的历史非常悠久。但是,由于荠菜抽薹早,利用时期短,所以长期以来未能跻身于栽培蔬菜的家族中,虽然在我国南方有极少量栽培,但在大多数地区仍为有待开发利用的野生蔬菜资源。
