分析了阿勃等四个春小麦品种(品系)在青海西宁地区籽粒中蛋白质及蛋白质组分含量的动态变化规律。结果表明,从开花至成熟,籽粒蛋白质含量的变化呈“U”形二次曲线。在籽粒发育过程中蛋白质四种组分的含量变化各不相同。籽粒成熟时蛋白质组成以麦谷蛋白为主,其次是醇溶蛋白和清蛋白,球蛋白含量最低。
The dynamic changes of protein and protein content of four spring wheat cultivars (lines) such as Abb in the kernels of Xining, Qinghai were analyzed. The results showed that from flowering to maturity, the variation of grain protein content showed a “U ” quadratic curve. In the process of grain development, the contents of four components of protein vary. The grain protein composition of wheat gluten-based, followed by gliadin and albumin, globulin content lowest.
