以牦牛肾周脂为研究对象,研究了其在储藏期(15±1)℃下脂肪酸与氧化指标(TBARS和PV)在动态变化中的相关性。结果表明:牦牛肾脂脂肪氧化初期发生于储藏期第0~25天。比较脂肪酸与氧化指标变化后发现,SFA与TBARS(和PV)呈较高正相关(≥0.971),MUFA和PUFA与TBARS(和PV)具有较低负相关系数(≤0.926)。在MUFA中,C16:1和C18:1与氧化指标的负相关系数较低,分别为-0.932和-0.981;在PUFA中,除CLA和LA外,其他多不饱和脂肪酸与氧化指标的相关性均较好(≥0.891)。因此,TBARS和PV可以被用于间接评估脂肪在工业开发前储存期间不饱和脂肪酸的含量分布状态。
In this study, we investigated the correlation between fatty acids and oxidative indexes (TBARS and PV) during the storage period (15 ± 1) ℃. The results showed that the initial stage of fat oxidation of yak kidney fat occurred during the storage period from 0 to 25 days. Comparing the change of fatty acid and oxidation index showed that SFA showed a high positive correlation with TBARS (≥0.971), and MUFA and PUFA had a lower negative correlation coefficient (≤0.926) with TBARS (and PV). In MUFA, the negative correlation coefficients of C16: 1 and C18: 1 with the oxidation index were low, which were -0.932 and -0.981, respectively. In PUFA, the correlations of other polyunsaturated fatty acids with oxidation indexes except CLA and LAA All better (≥0.891). Therefore, TBARS and PV can be used to indirectly assess the content profile of unsaturated fatty acids during storage of fat prior to industrial development.
