通过对乌桕皮油的理化常数、脂肪酸成份、甘油三脂及结构、与可可脂的相溶性进行测定表明,用乌桕皮油可作为天然可可脂的代用品,其用量以30%最佳。
According to the physical and chemical constants, the fatty acid composition, the triglyceride and the structure of the fatty acids, the compatibility with the cocoa butter, the results show that the crude oil can be used as the substitute of the natural cocoa butter, and the dosage is 30%.
