据最近的流行病学研究报告,谷物及谷物制品有降减患癌危险性良好效果。尽管研究的方法不尽相同,对谷物食用的形式和数量有相当大的差异,但大多数研究都认为食用大量的整粒谷物可降低患癌危险性,尤其是对结肠癌和胃癌等消化道癌症。 谷物提供膳食纤维,其防癌作用仅是整粒谷物中一小部分。事实上,除了膳食纤维,谷物中已发现含有大量抗癌、防癌物质,包括类胡萝卜素,生育酚和生育三烯酚,硒,类黄酮和木酚素等酚类物质。本文主要介绍这些防癌物质中抗氧化剂和植物雌激素。
According to recent epidemiological studies, cereal and cereal products have a good effect of reducing the risk of cancer. Although the methods studied are quite different and there is considerable variation in the form and amount of cereal consumed, most studies have concluded that eating large amounts of whole grain cereal reduces the risk of developing cancer, especially in the digestive tract such as colon and stomach cancer. Cereal provides dietary fiber, its anti-cancer effect is only a small part of the whole grain. In fact, in addition to dietary fiber, grains have been found to contain large amounts of anti-cancer and anti-cancer substances, including phenols such as carotenoids, tocopherols and tocotrienols, selenium, flavonoids and lignans. This article describes these anti-cancer substances in antioxidants and phytoestrogens.
