[目的]通过对辽源市2004年与2008年两次学校食堂卫生状况调查,对比分析5年间所发生的变化,为今后管理提供科学依据。[方法]对学校食堂的基本卫生设施及卫生管理进行调查与比较。[结果]学校食堂卫生许可证持有率、健康证持有率、卫生管理,基础卫生设施2008年均好于2004年,加工场所卫生及用水卫生两年类似。[结论]学校食堂餐具消毒、冷藏设施、“三防”设施还有待提高,学校食品卫生应加强其监管力度。
[Objective] Through the investigation on the hygienic conditions of two canteens in Liaoyuan City in 2004 and 2008, the change in five years was comparatively analyzed to provide a scientific basis for future management. [Methods] To investigate and compare the basic health facilities and health management of school canteens. [Results] The school cafeteria health permit ownership rate, health card ownership rate, health management, basic health facilities in 2008 are better than in 2004, the processing site health and water sanitation two years similar. [Conclusion] The school canteen tableware disinfection, refrigeration facilities, “three defenses” facilities have yet to be improved, the school food hygiene should strengthen its supervision.
