目的:为了追踪观察嵊泗县市售食品卫生质量,了解生产加工食品与销售食品的质量差异。方法:运用统计学χ2显著性检验方法[1],对嵊泗县2004~2008年间17类食品卫生质量的随机抽检结果进行分析。结果:共监测食品样品17类5814件,检验合格5127件,抽样总合格率为88.18%;其中销售食品17类2888件,合格率为91.90%;生产加工食品12类2926件,合格率为84.52%。12类销售类食品质量显著高于同类生产加工类食品(χ2=42.92,P<0.01);其中销售类的冷冻饮品、饮料和糕点质量高于生产加工类(χ2=11.98,59.46,9.06;P<0.01);生产加工类水产品质量显著高于销售类水产品质量(χ2=28.17,P<0.001)。结论:要进一步提高食品卫生质量,卫生执法部门有必要进一步加大卫生监督执法力度和深度。
OBJECTIVE: In order to observe the quality of food hygiene in the market of Shengsi County, and to understand the quality difference between the processed food and the food for sale. Methods: Using statistical χ2 significance test [1], the results of random sampling of health quality of 17 kinds of food in Shengsi from 2004 to 2008 were analyzed. Results: A total of 5,814 food samples were tested in 17 categories, with a total of 5127 samples passing the inspection and a total sampling rate of 88.18%. There were 2888 pieces of food distributed in 17 categories with a pass rate of 91.90%; 2926 pieces of processed foods were produced in 12 categories with a pass rate of 84.52 %. The quality of 12 kinds of foodstuffs sold was significantly higher than that of the same kinds of foodstuffs processed and processed (χ2 = 42.92, P <0.01). Among them, the quality of frozen drinks, beverages and pastries sold was higher than those of production and processing (χ2 = 11.98,59.46,9.06; P <0.01). The quality of production and processing aquatic products was significantly higher than that of marketing aquatic products (χ2 = 28.17, P <0.001). Conclusion: To further improve the quality of food hygiene, health law enforcement departments need to further strengthen the intensity and depth of health supervision and law enforcement.
