本研究旨在了解青岛市各类食品中食源性致病菌的污染状况,为食源性疾病控制提供科学依据。按照山东省监测网工作计划,采集青岛市12类食品共312件,根据《2011年山东省食源性疾病监测工作手册》进行沙门菌、金黄色葡萄球菌、单核细胞增生李斯特菌、大肠埃希菌O157∶H7、阪崎肠杆菌,蜡样芽胞杆菌、志贺菌、空肠弯曲菌、副溶血性弧菌9种食源性致病菌检测。结果显示,在312份样本中,共分离出4种20株食源性致病菌,总检出率为6.41%。其中金黄色葡萄球菌7株,副溶血性弧菌2株,沙门菌8株,阪崎肠杆菌3株。即食非发酵性豆制品类,生禽肉,生畜肉类致病菌检出率较高,其次为婴幼儿配方奶粉、谷类辅助食品类,应重点加强对这些食品的监测力度。
The purpose of this study is to understand the status of food-borne pathogens in all kinds of foods in Qingdao and provide a scientific basis for the control of food-borne diseases. According to the Shandong Province monitoring network work plan, a total of 312 types of food were collected in Qingdao City, 312, according to “2011 Shandong foodborne disease surveillance workbook” for Salmonella, Staphylococcus aureus, Listeria monocytogenes, large intestine Escherichia coli O157: H7, Enterobacter sakazakii, Bacillus cereus, Shigella, Campylobacter jejuni, Vibrio parahaemolyticus 9 kinds of foodborne pathogens detected. The results showed that in 312 samples, a total of four kinds of 20 food-borne pathogens were isolated, the total detection rate was 6.41%. Including Staphylococcus aureus 7, Vibrio parahaemolyticus 2, Salmonella 8, Enterobacter sakazakii 3. Ready-to-eat non-fermented soy products, raw poultry, meat and meat detection of pathogens higher, followed by infant formula, cereal-based food supplement, should focus on strengthening the monitoring of these foods.
