食品营养评价标准,通常是以维生素、微量元素的含量和氨基酸、特别是必需氨基酸含量为主要指标的。据北京市食品研究所分析,100克猴头含VB_10.69毫克,VB_21.86毫克、胡箩卜素0.01毫克,此外含磷856毫克、钙2毫克、铁13毫克。含蛋白质26.3%,比香菇高出一倍。把猴头和世界食用菌市场上最为畅销的四种食用菌蘑菇、香菇、草菇、金针菇的氨基酸、必需氨基酸含量列表对比(表一),可以看出,蘑菇、香菇、草菇、金针菇和猴头16种氨基酸总量分别为:27.67、13.67、22.99、13.44
