目的评估秦皇岛市水产品中主要致病菌的污染状况,全面评价流通环节和餐饮环节的食源性致病菌的流行情况,确定危害因素的分布和可能来源,及时发现水产品安全隐患,提出预防措施和建议。方法收集2005年-2015年秦皇岛市上报国家食品微生物及其致病因子监测网络平台数据、河北省北戴河暑期专项监测以及秦皇岛市暑期食品安全风险监测数据,汇总并进行回顾性分析。结果 2005年-2015年共检测水产品及其制品2 280份,总合格率为78.1%。预制动物性水产品合格率最高,为92.8%;海港区不合格率最高;菌落总数是污染的主要因素;街边烧烤摊点的检出率远高于饭店餐馆。结论秦皇岛市水产品存在安全隐患,监管部门应提供有效的监管措施,防止因食用水产品而发生食物中毒事件。
Objective To evaluate the pollution status of major pathogens in aquatic products in Qinhuangdao, evaluate the prevalence of food-borne pathogens in circulation and catering sectors, determine the distribution and possible sources of hazardous factors, and find out the potential safety hazards of aquatic products in time. Methods The data of monitoring network platform of national food microorganisms and its causative agents reported in Qinhuangdao city from 2005 to 2015, summer special monitoring of Beidaihe in Hebei Province and summer food safety risk monitoring data of Qinhuangdao City were collected and analyzed retrospectively. Results A total of 2 280 aquatic products and their products were tested from 2005 to 2015, with a total pass rate of 78.1%. The highest pass rate of prefabricated animal aquatic products was 92.8%; the highest unqualified rate was in harbor area; the total number of colonies was the main factor of pollution; the detection rate of street barbecue stalls was much higher than that of restaurant and restaurant. Conclusion Qinhuangdao City, aquatic products there are potential safety problems, regulatory authorities should provide effective regulatory measures to prevent the occurrence of food poisoning due to consumption of food incidents.
