采用原子吸收光谱法,测定了河北省承德市5种野菜(叶底珠、山马灡菜、北豆根、苜蓿、蕨菜)和5种常规蔬菜(茄子、茼蒿、胡萝卜、黄瓜、西红柿)中6种矿质元素(钙、镁、锰、铁、锌、铜)的含量,以期为指导人类健康饮食提供参考。结果表明:在测定的6种矿质元素中,钙、铜、铁、锌、锰5种元素在5种野生蔬菜的总含量均大于5种栽培蔬菜的总含量,只有镁在野生蔬菜中总含量小于常规蔬菜的总含量;试验表明,野生蔬菜含有比常规蔬菜更丰富的矿质元素,具有进一步研究开发利用的前景。
