目的规范托幼机构餐饮具消毒方法,为进一步提高餐饮具消毒质提供技术支撑。方法采用现场采样和微生物学检验方法,对托幼机构餐饮具消毒设施及消毒质量达标情况进行调查和监测。结果公办托幼机构均设有单独消毒间,拥有率为100%,民营托幼机构单独消毒间拥有率为21.62%;消毒后餐具细菌总数、大肠菌群以及致病菌检测结果,公办托幼机构合格率为66.15%,民营托幼机构合格率为37.93%;不同消毒因子对餐具消毒质量,红外线消毒合格率38.77%、热风消毒合格率70.37%;不同消毒因子消毒柜现场模拟消毒性能测试结果,红外线消毒合格率为42.85%、热风消毒合格率为66.66%。结论公办托幼机构餐饮具消毒设施配备、消毒制度管理以及消毒质量等整体水平比较好,但消毒后餐饮具监测合格率仍较低;从不同消毒因子消毒柜现场模拟消毒性能测试结果看,热风消毒好于红外线消毒,红外线消毒要保证灯管定期更换,加强监督管理。
Objective To standardize the methods of disinfection of tableware and tableware in nurseries and kindergartens, and to provide technical support for further improvement of sterilizing quality of tableware. Methods On-site sampling and microbiological tests were used to investigate and monitor the disinfection facilities and disinfection quality of catering kit in kindergartens and nurseries. Results Public nurseries and nurseries were equipped with separate disinfection rooms with a rate of 100%. The private disinfection booths owned by private nurseries were 21.62%. The total number of bacteria in tableware after disinfection, the coliform bacteria and the results of pathogenic bacteria tests showed that the public nurseries The passing rate of institutions was 66.15%, and the passing rate of private nurseries and childbearing institutions was 37.93%. The pass rate of disinfection factor to dishware was 38.77% and the pass rate of hot air disinfection was 70.37%. The field disinfection performance test results of disinfection cabinet with different disinfection factors , Infrared disinfection pass rate was 42.85%, hot air disinfection pass rate was 66.66%. Conclusion The overall standard of disinfection facilities, disinfection system management and disinfection quality of catering institutions in public kindergartens and nurseries is relatively good. However, the qualified rate of catering tableware after disinfection is still low. According to the field disinfection performance test results of disinfection cabinet with different disinfection factors, Disinfection better than infrared disinfection, infrared disinfection to ensure regular replacement of lamps, and strengthen supervision and management.
