目的了解南京市餐饮具集中消毒企业状况,为有关部门的行政决策提供科学依据。方法调查2010年南京市36个餐饮具集中消毒企业的地域分布,其中28个单位进行现场调查以及合格产品和不合格产品生产企业的比较,分析其存在的问题。结果采集28家餐饮具集中消毒企业生产的包装完好、待出厂使用的餐饮具,每家5~6件,共计158件,140件合格,合格率为88.6%。结论南京市郊区的餐饮具集中消毒企业数最多;每家单位通过清洗后餐饮具的高温烘干和热缩塑膜的包装对餐饮具消毒和保洁效果起到一定积极作用。
Objective To understand the status of catering equipment centralized disinfection enterprises in Nanjing and provide scientific basis for the administrative decision-making of relevant departments. Methods To investigate the geographical distribution of 36 centralized tableware disinfection enterprises in Nanjing in 2010, including 28 units conducting on-site investigation and comparison of qualified and unqualified products manufacturers and analyzing their existing problems. Results A total of 28 pieces of tableware and utensils were collected and packed in good condition. Five to six pieces of tableware were used in the factory. A total of 158 pieces and 140 pieces were passed, with a pass rate of 88.6%. Conclusion The number of tableware disinfection enterprises in the suburbs of Nanjing City was the largest. Each unit played a positive role in sterilizing and cleaning tableware by high-temperature drying and shrink film packaging after cleaning.
