目的为促进章丘市餐饮业持续健康发展,为餐饮业卫生监督管理提供科学依据。方法依据《消毒服务机构卫生规范》、《山东省餐饮具消毒服务机构卫生要求》,制定调查表。同时对消毒产品和洗消用水进行采样监测。结果调查20家餐饮具消毒服务机构,持有卫生许可证的占45%;从业人员健康证持有率45%;餐饮具洗消设备正常运转符合要求的占95%;产品消毒效果监测合格率84.5%,消毒剂残留量检测合格率98%,洗消用水检测合格率95%。其余项目合格率均较低。结论章丘市餐饮具消毒服务机构卫生状况令人担忧,卫生监督部门需加强对这一行业的引导和卫生法律法规知识宣传培训,加大监督执法力度。
The purpose is to promote sustainable and healthy development of catering industry in Zhangqiu City and provide scientific basis for health supervision and management of catering industry. Methods Based on the “Sanitation Code of Sterilization Service Agency” and “Sanitary Requirements of Sterilization Service Institutions of Shandong Province Tableware Disinfection Facilities”, a questionnaire was established. At the same time on the disinfection products and water for sampling monitoring. Results The investigation of 20 disinfecting service establishments for tableware and disinfectants, which held 45% of health permits; the health certificate of employees 45%; the normal operation of tableware decontamination equipment 95%; the pass rate of product disinfection monitoring 84.5%, disinfectant residue test pass rate of 98%, washing water test pass rate of 95%. The remaining projects pass rate are lower. Conclusion Zhangqiu City, tableware disinfection service health status is worrying, health supervision departments need to strengthen the guidance of this industry and health laws and regulations knowledge publicity and training, increase supervision and law enforcement efforts.
