乌骨鸡,原产江西泰和县武山下,故又名泰和鸡、武山鸡。它还有不少异名,如乌鸡、药鸡、丝毛鸡、羊毛鸡、绒毛鸡、松毛鸡、竹丝鸡、黑脚鸡、丛冠鸡、穿裤鸡等。其外貌特征有“十全”之称:即紫冠、缨头、绿耳、胡子、五爪、毛脚、丝毛、乌皮、乌肉和乌骨。它的眼、喙、蹠、趾、内脏及脂肪均为乌黑色;躯体短矮而小,一般公鸡体重1～1.25公斤,母鸡0.75～1公斤。乌骨鸡是我国特有的药用珍禽。驰名中外的“乌鸡白凤丸”和“乌鸡酒”等著名补药和补酒,都是以乌骨鸡作为主要原料的。乌骨鸡能补气养血,调经止滞,平肝祛风,益肾养阴。《本草纲目》中记载:“乌骨鸡甘平无毒,主治补虚劳亏损,益产妇”。近
