目的了解天津某城区餐饮业餐具卫生消毒质量现状,分析存在问题,为加强监管提供可靠依据。方法用大肠菌群快速检测纸片法,对天津市某经济开发区142家餐饮单位的餐饮具消毒效果进行调查与分析。结果从142家餐饮单位采集不同餐饮具标本2 090件,消毒效果平均总合格率76.60%。采用热力消毒法对餐饮具消毒效果合格率为82.21%,采用化学消毒法对餐饮具消毒效果合格率为68.00%。规模较大的餐饮单位餐饮具消毒合格率高于规模较小的餐饮单位,二者消毒效果合格率之间差异具有显著统计学意义。结论天津市经济开发区的中小型餐饮单位需要加强卫生消毒硬件设施建设,规范消毒方法,同时必须加强卫生监管力度。
Objective To understand the sanitary quality of tableware in catering industry in a city of Tianjin, analyze the existing problems and provide a reliable basis for strengthening supervision. Methods Coliform bacteria rapid test paper method was used to investigate and analyze the disinfection effect of catering equipment in 142 catering units in an economic development zone in Tianjin. Results A total of 2 090 samples of different dining utensils were collected from 142 catering establishments. The average total passing rate of disinfection effect was 76.60%. The use of heat disinfection of disinfection of dining tableware with a pass rate of 82.21%, the use of chemical disinfection of tableware disinfection pass rate of 68.00%. The large-scale catering units tableware disinfection pass rate is higher than the smaller catering units, the difference between the two disinfection effect pass rate has significant statistical significance. Conclusion Small and medium-sized catering units in Tianjin Economic Development Zone need to strengthen the construction of sanitation and disinfection hardware facilities, standardize the disinfection methods, and at the same time, strengthen the supervision on hygiene.
