会安(Hoi An)的吃,常常是围绕着一种叫做“Cau Lau”的米粉。这“Cau Lau”二字越南语发音近似“告老”,或“犒劳”,没有考证过是否对应着哪两个汉字。“告老”的独特之处在于,米粉产自会安城里一家老字号作坊,只此一家为正宗,别无分号。如果在别的城市如河内、胡志明市见到“告老”,不用尝,肯定不地道。“告老”的秘密,是制造过程中须得使用会安城里一口特定的古井打上来的井水。
Hoi An eats, often around a rice flour called Cau Lau. This “Cau Lau” Vietnamese word “Lao Lao” is similar to “Lao Lao”, but it has not been verified which two Chinese characters correspond to it. “Tell the old people” is unique in that rice flour is produced in an old fashioned factory in Hoi An. Only this one is authentic and there is no semicolon. If in other cities such as Hanoi, Ho Chi Minh City to see the “old”, do not try, certainly not authentic. The secret of “sue old man” is the well water that has to be used in the manufacturing process for a specific ancient well in Hoi An.
