It has now been established that the biochemical processes which are the basis of metabolism all have enzymatic properties. Therefore, it is quite natural that the comprehensive study of the enzyme has an increasingly great significance. In the study of metabolism, it has not been limited to determining the content of organic compounds (such as carbohydrates, proteins) formed by many biochemical reactions in organs during a certain period of plant life. However, considerable attention is paid to the activity of enzymes involved in the transformation of these compounds in plants. The vacuum infiltration method developed by Kursanov is of great significance for studying the activity of enzymes in plants for a deeper understanding of the essence of biochemical processes. Prior to the work of Kursanov (1935, 1938, 1940, and 1937, 1939), the enzymatic action in plants was mainly based on the method of autolysis. Despite the many studies done with this approach, we have seen little progress in understanding the biological role of enzymes.
