蚕豆,别称胡豆、罗汉豆、倭豆。上海人叫蚕豆、大豆,宁波人称其为“窝豆”。蚕豆富含蛋白质和淀粉,可作粮食及蔬菜,深受大家喜爱。记得在80年代初,市民买蚕豆凭副食品卡每户6斤,每斤7分半。每当蚕豆上市,菜场内买的人排成一条长龙过嫩的舍不得吃,老的肉质饱满的才肯掏卡购买。十一届三中全会后,商品多了,蚕豆这才自由流通。 上市最早的蚕豆来自南方的厦门、杭州、绍兴等地,粒小皮厚,僵而不糯,俗称三荚豆,乃是一些赶时鲜的人尝识;大多数人喜欢吃本地蚕豆,矮壮结实,籽粒饱满,皮薄肉糯,最受市场青睐。本地蚕豆以浦东三林、杜行最负盛名,人称“大白蚕”,颗粒肥硕,薄皮糖软,上口清香,烹调易酥。它的质量胜于日本蚕豆。二荚豆盛名旺产在南汇大治河一带,那里地处高坡,一片沃野,是理想中的蚕豆地、每当上市高
Broad beans, alias Dou beans, Luo Han beans, Japanese beans.
