目的:建立高效液相色谱法测定火锅老油中胆固醇含量的方法。方法:采用Kromasil C18反相色谱柱(150mm×4.6mm,5μm);流动相:甲醇;流速1.0mL/min,柱温38℃,检测波长205nm。结果:胆固醇在含量为2~10μg/μL浓度范围内有良好的线性关系,R2=0.9995。结论:HPLC法测定火锅老油中的胆固醇具有简便、准确、灵敏度高等优点,适用于火锅老油中胆固醇的测定。
Objective: To establish a method for the determination of cholesterol content in hot pot oil by high performance liquid chromatography. Methods: Kromasil C18 reversed-phase column (150 mm × 4.6 mm, 5 μm) was used as the mobile phase. The mobile phase was methanol. The flow rate was 1.0 mL / min. The column temperature was 38 ℃ and the detection wavelength was 205 nm. Results: Cholesterol had good linearity in the concentration range of 2 ~ 10μg / μL, R2 = 0.9995. Conclusion: The HPLC method has the advantages of simple, accurate and high sensitivity for the determination of cholesterol in hot pot fats. It is suitable for the determination of cholesterol in hot pot fats.
