目的了解石嘴山市餐饮业餐饮具消毒效果状况。方法采用大肠菌群快速检验纸片,按《餐(饮)具消毒卫生标准》规定的方法对1 030家不同规模的餐饮业餐饮具消毒效果进行监测。结果共检测餐饮具6 663份,平均总合格率为74.16%,学校食堂、大、中、小型餐饮单位合格率分别为87.25%、91.03%、82.06%和63.99%,有显著性差异(P<0.005)。采用洗碗机、消毒柜、蒸汽消毒和化学消毒剂洗消餐饮具的合格率分别为97.17%、85.09%、83.99%和45.12%,4种消毒方式的合格率之间比较,有显著性差异(P<0.005)。结论餐饮具监测合格率大型餐饮业好于中小型餐饮业,洗碗机消毒效果好于化学药物消毒效果。
Objective To understand the status of disinfection effect of catering equipment in Shizuishan City. Methods The test strips of coliform bacteria were tested quickly to monitor the disinfection effect of 1 030 dining tablewares with different sizes according to the prescriptions of Sanitary Standard for Disinfection of Meals (Drinking). Results A total of 6 663 tableware were tested, with an average total passing rate of 74.16%. The passing rates of school canteens, large, medium and small catering units were 87.25%, 91.03%, 82.06% and 63.99% respectively, with significant differences (P < 0.005). The passing rate of dishwashing, disinfecting cabinet, steam sterilizing and chemical disinfectant was 97.17%, 85.09%, 83.99% and 45.12%, respectively. There was a significant difference between the passing rates of the four disinfection methods (P <0.005). Conclusion Tableware monitoring pass rate Large-scale catering industry is better than small and medium-sized catering industry, dishwasher disinfection better than chemical disinfection.
