通过对固原市2004~2007年辖区餐饮业餐具消毒监测结果的分析,餐饮具消毒总合格率为75.27%,各年度合格率不够稳定;不同年份、不同量化级别餐饮业、不同类型餐具的监测合格率均有一定差异,A级高于B级,B级高于C、D级;各类餐具中饮具的合格率最高,其次为食具,灶具的合格率最低。因此,要继续加大餐饮业餐具消毒的监测力度,加强餐具的消毒管理工作,确保饮食卫生安全。
