目的调查本地食用冰块卫生状况,保障人民健康。方法抽取本地酒吧/KTV、大中型饭店制冰机自制的食用冰块进行微生物和理化指标的检测。结果 2011-2013年共检测食用冰块119件,检测项目为总大肠菌群、细菌总数、致病菌、总砷、铅、铜。食用冰块2011年的合格率为34.3%,检出2株金黄色葡萄球菌;2012年的合格率为53.5%;2013年的合格率为73.1%。检测制冰水(自来水)共38件,合格率为100%。有清洗消毒功能的制冰机生产的食用冰块合格率高。结论加强监管力度,提高食品安全生产意识,食用冰块卫生状况才能得到改善。
Objective To investigate the hygienic condition of local edible ice and ensure people’s health. Methods Extraction of local bars / KTV, large and medium-sized hotel ice maker homemade ice for microbial and physical and chemical indicators of detection. Results A total of 119 pieces of ice cubes were detected during 2011-2013. The test items were total coliforms, total bacteria, pathogens, total arsenic, lead and copper. The qualification rate of edible ice cubes in 2011 was 34.3%, two Staphylococcus aureus were detected; the pass rate in 2012 was 53.5%; in 2013, the pass rate was 73.1%. Detection of ice water (tap water) a total of 38, with a pass rate of 100%. Cleaning and disinfection of ice-making machine production of ice with high pass rate. Conclusion To strengthen supervision and improve food safety awareness, hygienic condition of ice can be improved.
