以池塘养殖的1龄和2龄梭鱼为试验材料,采用营养成分常规分析方法分析肌肉的水分、粗蛋白质、粗脂肪含量、氨基酸组成、脂肪酸组成和一般营养元素的含量。结果表明:梭鱼肌肉中粗蛋白和粗脂肪含量较高;其氨基酸组分完全,富含7种人体必需氨基酸(色氨酸因完全水解未能检测)和2种半必需氨基酸,且鲜味氨基酸、支链氨基酸和含硫氨基酸含量丰富,尤其含有较多的谷氨酸;肌肉中的锌铜比值和锌铁比值合理;脂肪酸组分完全,富含人体必需脂肪酸,同时EPA和DHA含量相对丰富。综上所述,梭鱼是一种营养平衡、价值高和味道鲜美的鱼类。又因其是广温性和广盐性鱼类,因此可以认为它是一种值得开发推广和规模化养殖的优良养殖品种。
The first and second instars of barramundi cultured in ponds were used as experimental materials to analyze the contents of water, crude protein, crude fat, amino acid composition, fatty acid composition and general nutrient elements in muscle by routine analysis of nutrients. The results showed that the content of crude protein and crude fat in the muscle of barramundi was high. The amino acid composition was complete and rich in seven kinds of human essential amino acids (tryptophan failed to detect due to complete hydrolysis) and two kinds of semi-essential amino acids, Amino acids, branched-chain amino acids and sulfur-containing amino acids rich in content, especially containing more glutamic acid; muscle zinc and copper ratio and the ratio of zinc and iron is reasonable; fatty acid composition is complete, rich in essential fatty acids, while EPA and DHA relative rich. In summary, barracuda is a nutritious, high value and delicious fish. Because of its wide-temperature and broad-salt fish, it can be considered as a good breeding species worthy of promotion and large-scale cultivation.
