目的探索大肠菌群纸片法与培养发酵法检测食具消毒的效果。方法 GB14934-94《食(饮)具消毒卫生标准》[1]中大肠菌群的检测提供了纸片法和发酵法两种检测方法。结果用国家标准判定大肠菌群指标,纸片法合格率为60.8%,发酵法合格率为62.4%,检测结果两法合格率差异无统计学意义,总符合率为93.6%。结论两种方法检测结果差异无统计学意义,但发酵法方法繁琐,用时较长,不适应快速检测的需要,而纸片法具有操作简便,基本不需要试剂,能够提高检测效率等优点。
Objective To explore the coliform bacteria paper method and culture fermentation method to detect the effect of food disinfection. Methods GB14934-94 “Food (drinking) with a disinfection health standards” [1] in the detection of coliform bacteria provide two methods of detection of paper and fermentation method. Results According to the national standard, the pass rate of coliform bacteria was 60.8%. The pass rate of fermentation was 62.4%. There was no significant difference in pass rate between the two methods. The total coincidence rate was 93.6%. Conclusion There is no significant difference between the two methods. However, the fermentation method is cumbersome and takes a long time, which is not suitable for the rapid detection. However, the paper method has the advantages of simple operation, little need for reagents, and improved detection efficiency.
