曾几何时,人们都把吃上精米白面作为生活富足的标志。不过,当温饱不再是问题的时候,人们开始多吃起糙米来。糙米是水稻去除谷壳之后的产物。糙米的表面还有一层皮,含有很多纤维。把这层纤维去掉,就得到了精米。去除的这层东西,一般占到糙米总重的7%左右,被称为米糠。米糠虽然不好吃,不过其中含有现代人的饮食中缺乏的膳食纤维,还有相当多的维生素和矿物质以及丰富的抗氧化剂。此外,还有含量不低的不饱和脂肪,与动物油相比,算是健康的油。
