本文在概述国外菜刀锋利度及锋利度测试机发展状况的基础上,针对我国菜刀手工操作和重量、规格、尺寸、形状等不统一的特点,研制出适合我国情况的菜刀锋利度测试机及锋利度的定量法,为我国刃口产品锋利度的测试和标定探索出一条比较科学的途径。(锋利度测试机结构简单、操作方便,容易掌握。它能自动进料、下刀、抬刀、记时,测试数据客观、准确。)本文还对菜刀锋利度的物理本质、钝化规律、被切割材料的选择、模拟切肉皮的基本原理、刀转角的补偿原理以及肉胶比 K 值等进行了理论上的论述。
