目的通过对一起误用亚硝酸盐引起食物中毒事件的调查思考,为今后预防和监管提供依据。方法采用流行病学调查,结合实验室检测结果分析。结果根据临床表现、流行病学调查和实验室检测结果,依据WS/T86-1996《食源性急性亚硝酸盐中毒诊断标准及处理原则》,确定为亚硝酸盐食物中毒。结论通过加强食品添加剂的监管,做好卫生监督管理,提高从业人员认识,开展积极宣传,规范实验室检测来预防类似事件发生。
Objective To investigate the investigation of food poisoning caused by the misuse of nitrite and provide the basis for prevention and supervision in the future. Methods Epidemiological survey, combined with laboratory test results. Results According to clinical manifestations, epidemiological investigation and laboratory test results, according to WS / T86-1996 “foodborne acute nitrite poisoning diagnostic criteria and principles”, identified as nitrite food poisoning. Conclusion By strengthening the supervision of food additives, doing a good job of hygiene supervision and management, raising awareness of practitioners, carrying out positive publicity and standardizing laboratory tests to prevent similar incidents.
