为了对珍珠龙胆石斑鱼的营养品质进行评价,利用常规方法对养殖珍珠龙胆石斑鱼肌肉和鱼皮的氨基酸、脂肪酸以及肌肉、鱼皮和肝脏的矿物质组成进行测定.结果 表明珍珠龙胆石斑鱼肌肉和鱼皮中含有16种氨基酸,总量分别19.58%和25.03%;必需氨基酸分别为7.38%和6.39%,占氨基酸总量分别为37.69%和25.53%.珍珠龙胆石斑鱼肌肉和鱼皮的脂肪酸含量关系为Saturated fatty acid>Monounsaturated fatty acid>Polyunsaturated fatty acid SFA分别占脂肪酸总量51.72%,72.37%;MU-FA分别占脂肪酸总量33.05%,17.805;PUFA分别占脂肪酸总量15.35%,9.02%.珍珠龙胆石斑鱼肌肉矿物质含量高低顺序为:K> Na> Ca> Mg> Zn> Fe> Cu> Mn;鱼皮矿物质含量高低顺序为:Ca>Na>K>Mg>Zn>Fe>Cu>Mn;肝脏矿物质含量高低顺序为:K>Na> Fe>Ca> Mg> Zn> Cu> Mn;但是按照Hill和Matron提出的“理化性质相似的元素”,龙胆石斑鱼的铜、铁、锌的比值不合理.
