亚硝酸盐和仲胺化合物在体内外均可结合成致癌性N—亚硝基化合物。维生素C可将亚硝酸盐转变成NO和水,已被公认为N—亚硝基化合物的最佳阻断剂。蔬菜作为体内亚硝酸盐和维生索C的重要来源被广泛加以研究。为一步评价人体亚硝酸盐、维生素C的摄入量及探讨二者的关系,我们对林县食管癌的高发区主要冬菜在贮存过程亚硝酸盐维生素C含量进行了测定。
Nitrite and secondary amine compounds can be combined into carcinogenic N-nitroso compounds both in vitro and in vivo. Vitamin C converts nitrite into NO and water and has been recognized as the best blocker for N-nitroso compounds. Vegetables are widely studied as an important source of nitrite and vitamin C in the body. To evaluate the human nitrite and vitamin C intake in a single step and to explore the relationship between the two, we measured the vitamin C content of nitrite during the storage of the main winter vegetables in the high incidence area of esophageal cancer in Lin County.
