屠宰场址选择:屠宰场应建立在无恶臭、无灰尘和无其它污染源的地方,应有充分的工作场所,地势要高、干燥以利污水、污物排放,尽量单独搭建,远离居民住宅。建筑及卫生设施:屠宰场应由屠宰停留场所(圈栏)、屠宰间、烫毛槽、肉尸挂置间(钩架)、内脏和皮血整理台及污水无害化处理池等部份组成,布局应符合流水作业要求、防止交叉污染。屠宰间地面及墙壁应用不透水材料铺砌,地面应有一定的坡度,墙根不低于150公尺,便于冲洗清洁。生产用水应使用自来水或井水,水质应符合国家生活饮用水卫生标准,井水做到专用,并用漂白粉定期消毒。
