用常规方法测定、分析了无锡淡水渔业研究中心选育的2代吉富罗非鱼肌肉中营养成分组成与含量。结果显示,吉富罗非鱼肌肉中水分含量为78.8%,蛋白质为17.39%,粗脂肪为0.89%,灰分含量为1.32。肌肉中共检测出17种氨基酸(除色氨酸),总量占干物质的76.01%。其中包括了7种人体必需氨基酸,占干重的30.46%,占氨基酸总量的40.07%,其必需氨基酸的构成比例基本符合FAO/WHO的标准。吉富罗非鱼限制性氨基酸主要为蛋氨酸+胱氨酸、缬氨酸和异亮氨酸,必需氨基酸指数(EAAI)为69.55,鲜味氨基酸占氨基酸总量的29.55%。脂肪酸中多不饱和脂肪酸含量为24.56%,高于其他优质鲤科鱼类;其中EPA与DHA的总含量为11.9%,高于多种经济鱼类。吉富罗非鱼肌肉的矿物质元素含量丰富、合理。实验结果表明,吉富罗非鱼有较高的食用价值与保健作用。
The composition and content of nutrients in muscle of the second generation of Tilapia tilapia bred by Wuxi Freshwater Fisheries Research Center were analyzed by conventional methods. The results showed that the moisture content of muscle was 78.8%, protein 17.39%, crude fat 0.89% and ash content 1.32. A total of 17 kinds of amino acids were detected in muscles (except tryptophan), accounting for 76.01% of the total dry matter. It includes seven essential amino acids, accounting for 30.46% of the total dry weight, accounting for 40.07% of the total amino acids. The essential amino acid composition basically meets the standards of FAO / WHO. The limiting amino acids of tilapia were mainly methionine, cystine, valine and isoleucine, the essential amino acid index (EAAI) was 69.55, and the umami amino acids accounted for 29.55% of the total amino acids. The content of polyunsaturated fatty acids in fatty acids was 24.56%, which was higher than other high quality carps. The total content of EPA and DHA was 11.9%, higher than that of many kinds of economic fish. GIFT tilapia muscles rich in mineral elements, reasonable. The experimental results show that, GIFT tilapia has a higher edible value and health effects.
